Watermelon— perfect for summer picnics!
Watermelon Salad
2 cups of chopped watermelon (red or yellow)
4 green onions, thinly sliced
Juice of a lime or lemon with some zest
Half a Serrano chili seeded and finely chopped (use a quarter of the chili for less heat or omit)
Chopped fresh mint (optional)

Serrano chili’s add a little heat.
Chopped fresh cilantro (optional)
Chopped fresh parsley (optional depending on what’s growing in your garden)
½ teaspoon of chat masala (Indian spice)
Pinch of sugar (optional).
Toss all ingredients in a bowl and serve chilled.
Growing Parsley?

Each year, the International Herb Association (IHA) designates an herb to be crowned the ‘Herb of the Year.’ This long-standing tradition dates back to 1995, and the selection process involves herb societies, groups, and experts from all around the world. For 2021, the herb selected by the IHA just so happens to be parsley.
it’s an herb I love to include in my tower garden every year, especially, since in my climate, if I grow in spring and summer, it will continue giving at times, even through to the following spring.
